Food Recipe: Chicken Supreme with Asparagus and Herbs

Belgian Cuisine is famous for its mussels and frites (French-fried potatoes), waffles, and endive. Fine chocolates are a passion and exquisite chocolatiers dot the marketplace of every city. More beer is consumed than wine by the populace. Beer laces the national dish, carbonnades flamandes, a Flemish beef stew. Belgians love potatoes and are fond of game and meat. Charcuterie, a basket of bread, and beer often make a meal. Fish and seafood are important. Hearty soups play a big role, and the so called waterzooies are the most typical. Belgium is also famous for its exciting tourist places. For a good choice of hotels with discount prices, visit hotels in brussels for more information. You can always rely upon the French to add a certain “je ne sais quoi” to even the simplest food …including the humble cheese and ham sandwich. The croque-monsieur (which becomes a croque-madame if you top it with a fried egg) is a great favourite in French cafés & bistros, and there are as many methods of crafting it as there are cafés! This one works for me. But, please be warned … it’s not for calorie-counters, the Cholesterol Police or those of a nervous disposition!!

Food Recipe: Brazilian Black-Eyed Pea and Shrimp Fritters – Acarajé

Acarajé are a popular street food snack in Brazil, especially at the beach. Black-eyed peas, seasoned with ground dried shrimp and onions, are shaped into balls and deep fried in palm oil, then split and filled with a spicy shrimp and onion filling. Though dried shrimp are a traditional ingredient in acaraje, they tend to impart a very strong flavor. In this milder version, the cooked fritter is split and then filled with fresh shrimp and caramelized onions.

“This stunning dish is an amazing combination of sweet, spicy, and salty flavors all sticking to succulent pieces of chicken.” This recipe seems Thai – it is chicken thighs, a brown sugar, ginger, garlic sauce with jalpenoos, green onions, and roasted peanuts. Served over Jasmine rice. Very good but not overly hot!

Food Recipe: Matambre (Argentinian Style Stuffed Beef)

Matambre is a popular dish in Argentina. It is beef stuffed with cooked eggs, spinach and other vegetables. Some of the cuts of meats used in Argentina and South America are different than the cuts in the United States. The kind of meat used for this dish is similar to flank steak and is cooked in the oven or on the stove for about 1 hour and often served with chimichurri. It can be eaten cold or hot. When it is eaten cold, it is perfect for a picnic.
